  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 2 tbsp red food coloring
  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8×8-inch baking dish with nonstick spray or parchment paper.
  2. In a bowl, whisk together granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until well combined. Sift in flour, cocoa powder, and salt; mix until just combined. Stir in red food coloring.
  3. In another bowl, beat softened cream cheese until smooth. Add egg and vanilla; mix until fully incorporated.
  4. Pour half of the brownie batter into the prepared dish, then dollop cheesecake mixture on top and swirl gently. Top with remaining brownie batter.
  5. Bake for 30-35 minutes or until a toothpick comes out mostly clean with moist crumbs attached. Cool slightly before serving.
