  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In one bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix sugar and oil until combined. Add buttermilk, eggs, red food coloring, and vanilla; mix until smooth.
  4. Gradually combine dry ingredients with wet mixture until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before frosting with cream cheese icing.
