Description

Ingredients

  • 1 ½ tsp baking powder
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • 2 tsp vanilla extract
  • ½ cup milk (whole or alternative)
  • 1 cup blue candy coating
  • Coconut flakes (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with colorful liners.
  2. In a bowl, whisk together flour and baking powder.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla.
  4. Gradually mix in dry ingredients alternating with milk until combined.
  5. Fill liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Cool completely before decorating with blue candy coating and optional coconut flakes.
