- 3 tbsp seasoned rice vinegar
- 1/4 cup mayonnaise (preferably Kewpie)
- 2 tbsp Sriracha sauce (or to taste)
- 3 green onions (chopped)
- 1 cup panko breadcrumbs
- 2 tbsp sesame seeds (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Rinse sushi rice under cold water until clear, then cook according to package instructions (about 20 minutes). Stir in rice vinegar once cooked.
- Flake salmon into bite-sized pieces in a bowl. Mix with mayonnaise and Sriracha sauce until combined but still chunky.
- In a greased baking dish, layer half of the sushi rice, followed by the salmon mixture, then the remaining rice pressed down gently.
- Top with panko breadcrumbs and sesame seeds.
- Bake for 25-30 minutes or until golden brown. Drizzle with soy sauce before serving.
