Description

  • 2 cans (15 oz each) low-sodium navy beans, drained and rinsed
  • 6 strips thick-cut bacon, chopped
  • 1 medium sweet onion (like Vidalia), finely chopped
  • 1 cup ketchup
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 2 tsp smoked paprika
  • 2 tbsp apple cider vinegar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the chopped bacon until crispy. Drain excess fat but leave some for flavor.
  3. Sauté the diced onion in the skillet until translucent, about 5 minutes.
  4. Add the drained navy beans, ketchup, maple syrup, Dijon mustard, smoked paprika, and apple cider vinegar. Mix well.
  5. Transfer the mixture to a baking dish and bake uncovered for about 45 minutes until bubbly and caramelized on top.
  6. Let cool slightly before serving warm.
