  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water in a fine mesh strainer to remove bitterness.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  4. Add rinsed quinoa and vegetable broth; bring to a boil.
  5. Once boiling, reduce heat to low, cover the skillet, and simmer for about 15 minutes until liquid is absorbed and quinoa is fluffy.
  6. Gently mix in chopped pistachios and dried cranberries. Season with salt and pepper before serving warm.
