Ingredients

  • 1 lb sirloin or flank steak
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • ½ medium red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • ¼ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add the steak and let it marinate for at least 30 minutes.
  2. Wash and chop the cherry tomatoes, cucumber, and red onion.
  3. Heat a cast-iron skillet over medium-high heat. Sear the marinated steak for about 4-5 minutes per side until browned.
  4. Slice the cooked steak and layer it in bowls with greens, chopped veggies, and crumbled feta cheese.
  5. Drizzle homemade dressing generously over each bowl before serving.
