  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 2 tsp mint extract
  • 4 drops green food coloring
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mint chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg, mint extract, and green food coloring; mix until combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Fold in chocolate chips and mint chocolate chips until evenly distributed.
  6. Scoop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
  7. Bake for 10-12 minutes or until edges are lightly golden but centers remain soft.
  8. Allow cookies to cool slightly before transferring them to a wire rack.
