Ingredients

  • 4 salmon fillets (approximately 6 oz each)
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced (mix of red and yellow)
  • 2 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • Juice of 1 lemon
  • 1 tsp ginger powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper.
  3. In a bowl, whisk together honey, minced garlic, soy sauce, ginger powder, lemon juice, salt, and pepper.
  4. Arrange salmon on one side of the sheet pan and place broccoli and bell peppers on the other side.
