  • 1 cup cooked rice or quinoa
  • 8 oz large fresh shrimp, peeled
  • 1 ripe mango, diced
  • 1 cucumber, diced (preferably English)
  • 1 ripe avocado, sliced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp wasabi paste
  • 1 tsp brown sugar
  • 1 tbsp unseasoned rice vinegar
  • 2 tbsp toasted sesame seeds

Instructions

  1. Cook the rice or quinoa according to package instructions.
  2. In a bowl, whisk together soy sauce, wasabi paste, brown sugar, and rice vinegar to make the dressing.
  3. Heat olive oil in a skillet over medium-high heat. Sauté shrimp until pink and opaque (about 3-4 minutes).
  4. While shrimp cooks, prepare mango, cucumber, and avocado.
  5. Assemble bowls by layering rice/quinoa at the base and topping with shrimp, mangoes, cucumbers, avocado slices, and sesame seeds.
  6. Drizzle wasabi ginger dressing over each bowl before serving.
