Description

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 4 large eggs
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 cups mixed dried fruits (currants, raisins, sultanas)
  • 8 oz marzipan
  • 1/4 cup apricot jam

Instructions

  1. Preheat oven to 325°F (160°C) and prepare two 8-inch round cake pans with baking spray or parchment paper.
  2. Cream softened butter and sugar together until light and fluffy. Gradually add eggs one at a time, mixing well after each addition.
  3. Sift together flour, cinnamon, and nutmeg; gently fold into the butter mixture until just combined.
  4. Stir in the mixed dried fruits. Divide half the batter between the prepared pans, layering with marzipan before adding the remaining batter.
  5. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool completely before brushing with apricot jam and covering with marzipan.
