- 1 cup unsalted butter, softened
- 1 cup sugar
- 4 large eggs
- 1 tsp ground cinnamon

- 2 cups mixed dried fruits (currants, raisins, sultanas)
- 8 oz marzipan
- 1/4 cup apricot jam
Instructions
- Preheat oven to 325°F (160°C) and prepare two 8-inch round cake pans with baking spray or parchment paper.
- Cream softened butter and sugar together until light and fluffy. Gradually add eggs one at a time, mixing well after each addition.
- Sift together flour, cinnamon, and nutmeg; gently fold into the butter mixture until just combined.
- Stir in the mixed dried fruits. Divide half the batter between the prepared pans, layering with marzipan before adding the remaining batter.
- Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool completely before brushing with apricot jam and covering with marzipan.
