  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 large eggs (room temperature)
  • 1 cup whole milk (or buttermilk)
  • ½ cup vegetable oil (or melted butter)
  • 2 cups whipped cream (freshly whipped)
  • 1 cup sour cherries (jarred or fresh)

Instructions

  3. In another bowl, beat eggs, milk, and oil until combined. Pour into dry ingredients and mix until just blended.
  4. Divide batter evenly between prepared pans. Bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 5 minutes before transferring to wire racks.
  5. Once cooled, slice each layer horizontally if desired. Assemble by alternating layers of cake, whipped cream, and cherries.
