Ingredients

  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Ground cinnamon
  • Vegetable oil
  • Large eggs
  • Grated carrots
  • Cream cheese
  • Unsalted butter
  • Powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine vegetable oil and eggs; whisk until smooth. Stir in grated carrots.
  4. Gradually fold the dry mixture into the wet mixture until just combined. Add nuts if desired.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While cakes cool, beat cream cheese and butter until creamy. Gradually mix in powdered sugar until fluffy.
  7. Once cooled, frost between layers and on top of the cake with cream cheese frosting.
