Ingredients

  • 4 cups fresh broccoli florets
  • 2 cups cooked brown rice
  • 1 cup low-fat cheddar cheese, grated
  • 1 cup non-fat Greek yogurt
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In boiling salted water, blanch the broccoli florets for 3 minutes until bright green and tender-crisp. Drain and set aside.
  3. In a large bowl, mix the cooked brown rice, blanched broccoli, cheddar cheese, Greek yogurt, garlic powder, salt, and pepper until well combined.
  4. Spray a baking dish with nonstick spray. Pour the mixture into the dish and spread evenly.
  5. In a separate bowl, combine panko breadcrumbs with a drizzle of olive oil or melted butter if desired. Sprinkle this over the casserole.
