  • 2 lbs beef chuck roast
  • 4 cups low-sodium beef broth
  • 3 tbsp low-sodium soy sauce
  • 1 inch fresh ginger, grated
  • 4 garlic cloves, minced
  • 2 cups fresh ramen noodles
  • 1 cup carrots, sliced
  • 1 cup bell peppers, sliced
  • 1/4 cup green onions, chopped (for garnish)
  • Fresh cilantro (optional)

Instructions

  1. Sear the beef chuck roast in a skillet over medium-high heat until browned on all sides.
  2. Transfer the seared beef to a slow cooker and add beef broth, soy sauce, grated ginger, minced garlic, carrots, and bell peppers.
  3. Cover and cook on low for 8 hours or high for 4 hours.
  4. About 30 minutes before serving, stir in fresh ramen noodles.
  5. Serve hot, garnished with chopped green onions and cilantro if desired.
