Instructions
- Sear the beef chuck roast in a skillet over medium-high heat until browned on all sides.
- Transfer the seared beef to a slow cooker and add beef broth, soy sauce, grated ginger, minced garlic, carrots, and bell peppers.
- Cover and cook on low for 8 hours or high for 4 hours.
- About 30 minutes before serving, stir in fresh ramen noodles.
