  • 4 garlic cloves, minced
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • 2 tbsp extra virgin olive oil

Instructions

  2. In a skillet over medium-high heat, heat olive oil. Season beef with salt and pepper; sear until browned on all sides (about 4-5 minutes per side).
  3. Add garlic and onions to the skillet after removing the beef; sauté until onions are translucent.
  4. Transfer everything to a slow cooker: add seared beef, mushrooms, carrots, thyme, bay leaves, and pour in beef broth.
  5. Cook on low for 8 hours or high for 4 hours.
