Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 large yellow onion, diced
  • 3 medium carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Chop the onions, carrots, celery, and mince the garlic.
  2. Optional: Sear chicken breasts in a skillet until golden brown.
  3. Layer onions in the slow cooker followed by carrots and celery; place chicken on top.
  4. Pour in diced tomatoes and chicken broth; season with Italian seasoning, salt, and pepper.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. Shred the chicken in the pot using two forks and stir before serving.
