  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted Kalamata olives
  • 1 medium red onion, finely chopped
  • 4 garlic cloves, minced
  • 2 tsp dried oregano
  • 1/2 cup crumbled feta cheese
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and pat dry the chicken breasts. Season with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Sauté the red onion and garlic until fragrant (3-5 minutes).
  3. Layer seasoned chicken in the slow cooker; top with sautéed onion, garlic, cherry tomatoes, olives, oregano, and lemon juice. Drizzle with more olive oil.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
