  • 2 cups shredded cheddar cheese
  • 1 cup chopped bell peppers (any color)
  • 2 cups crushed tortilla chips
  • 2 green onions, chopped

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. Transfer beef to the slow cooker and stir in taco seasoning, black beans, corn, diced tomatoes, and bell peppers.
  3. Layer half of the shredded cheese over the mixture, then add crushed tortilla chips on top. Finish with the remaining cheese.
  4. Cook on low for 4-6 hours until heated through and flavors meld.
