  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 12 small tortilla cups

Instructions

  1. Prep the ingredients: Rinse and drain the black beans. Dice the red bell pepper, cherry tomatoes, red onion, and chop the cilantro.
  2. Mix the filling: In a large bowl, combine black beans, corn, bell pepper, tomatoes, onion, and cilantro. Squeeze fresh lime juice over the mixture.
  3. Add avocado: Gently fold in the diced avocado to keep it intact.
