- 1 lb ground beef (80/20)
- 1 cup finely chopped bell peppers (mix of red and green)
- 1 cup salsa
- 1 cup breadcrumbs (plain or seasoned)
- 2 large eggs
- 1 cup shredded sharp cheddar cheese
- 1 tsp cumin
- 1 tsp chili powder
- ½ cup ketchup
- 2 tbsp brown sugar
- 1 tbsp mustard
Instructions
- Preheat your oven to 375°F (190°C). Spray a loaf pan with nonstick cooking spray.
- In a large bowl, mix together ground beef, bell peppers, salsa, breadcrumbs, eggs, cheddar cheese, cumin, and chili powder until well combined.
- Transfer the mixture to the prepared loaf pan and shape into a loaf.
- In a small bowl, mix ketchup with brown sugar and mustard; spread over the top of the meatloaf.
- Bake for about 1 hour or until the internal temperature reaches 160°F (70°C). Let rest for 10 minutes before slicing.
