Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup finely chopped bell peppers (mix of red and green)
  • 1 cup salsa
  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a loaf pan with nonstick cooking spray.
  2. In a large bowl, mix together ground beef, bell peppers, salsa, breadcrumbs, eggs, cheddar cheese, cumin, and chili powder until well combined.
  3. Transfer the mixture to the prepared loaf pan and shape into a loaf.
  4. In a small bowl, mix ketchup with brown sugar and mustard; spread over the top of the meatloaf.
  5. Bake for about 1 hour or until the internal temperature reaches 160°F (70°C). Let rest for 10 minutes before slicing.
