- ¾ cup buttermilk
- 2 tbsp sugar
- 6 tbsp unsalted butter (cold, cubed)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Roast sweet potatoes at 425°F for 20-25 minutes until tender. Mash and let cool slightly.
- In a bowl, whisk together flour, baking powder, salt, sugar, cinnamon, and nutmeg.
- Cut in cold butter until the mixture resembles coarse crumbs.
- In another bowl, combine mashed sweet potatoes and buttermilk until smooth. Fold into dry ingredients gently.
- Turn out dough onto a floured surface; pat to about an inch thick. Cut out biscuits and place on the baking sheet.
