  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 2 medium carrots, sliced thinly
  • 2 celery stalks, sliced
  • 8 oz wide egg noodles
  • 2 tbsp low-sodium soy sauce
  • 1 tsp red pepper flakes (adjust to taste)
  • 6 cups chicken broth

Instructions

  1. Chop chicken into bite-sized pieces and mince garlic. Slice carrots and celery.
  2. In a large pot, heat olive oil over medium heat. Sauté garlic, carrots, and celery until softened (about 5 minutes).
  3. Add chopped chicken; season with salt and pepper. Cook until no longer pink (about 6 minutes).
  4. Pour in chicken broth; bring to a simmer. Stir in soy sauce and red pepper flakes. Simmer for 10 minutes.
  5. Add egg noodles in the last 5 minutes of cooking until al dente.
  6. Serve hot, garnished with fresh herbs if desired.
