  • 3 cups vegetable broth
  • 2 tbsp red miso paste
  • 1 tbsp low-sodium soy sauce

  • 2 green onions, thinly sliced
  • 2 soft-boiled eggs
  • 1 tbsp toasted sesame seeds
  • 1 sheet nori seaweed, cut into strips

Instructions

  1. Boil water in a large pot. Cook ramen noodles according to package instructions until tender but firm. Drain and set aside.
  2. In a separate pot over medium heat, combine vegetable broth, miso paste, and soy sauce. Stir until smooth and let simmer for about 5 minutes.
