  • 1/3 cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp toasted sesame oil
  • 1 tbsp fresh lime juice
  • 1 tsp freshly grated ginger
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup chopped scallions
  • 1 cup julienned carrots
  • Fresh cilantro for garnish

Instructions

  1. Boil water in a large pot. Cook rice noodles according to package instructions (about 5 minutes). Drain and rinse under cold water.
  2. In a bowl, whisk together peanut butter, soy sauce, sesame oil, lime juice, ginger, and red pepper flakes until smooth.
