- 1 cup plain breadcrumbs

- 1 cup shredded mozzarella cheese (plus more for stuffing)

- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions

- Roll the mixture into golf ball-sized meatballs; stuff each with remaining mozzarella.
- Heat olive oil in a skillet over medium heat and sear meatballs until golden brown on all sides (about 3-4 minutes per side).
- Transfer to a baking dish and bake for 20-25 minutes until cooked through.
- Sprinkle with Parmesan cheese before serving.
