Ingredients

  • 2 cups fresh spinach (washed)
  • 1 cup crumbled feta cheese
  • 1 sheet puff pastry (thawed)
  • 2 large eggs (beaten)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Sauté chopped onion until translucent, then add minced garlic and cook for an additional minute.
  3. Add spinach to the skillet, cooking until wilted (about 3 minutes). Drain excess moisture.
  4. In a bowl, mix the sautéed vegetables with feta cheese and beaten eggs. Season with salt and pepper.
  5. Roll out puff pastry on a floured surface to about 1/8 inch thick. Place it on the prepared baking sheet, allowing some overhang.
  6. Spoon filling onto the center of the pastry, fold over the edges, and pinch to seal.
  7. Brush top with beaten egg for a golden finish and bake for 25-30 minutes until golden brown.
