- 1 bunch asparagus (about 1 pound), trimmed and cut into bite-sized pieces
- 3 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
- ¼ cup grated Parmesan cheese
- 2 cups arugula or spinach
Instructions
- Rinse the green peas and asparagus under cold water. Trim tough ends off the asparagus and cut into bite-sized pieces.
- Blanch the asparagus in boiling salted water for 2-3 minutes until bright green and tender-crisp.
- Shock blanched asparagus in an ice bath to retain color and crunch.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- In a large bowl, combine arugula/spinach, blanched asparagus, and green peas. Drizzle with vinaigrette and toss gently to coat.
- Top with freshly grated Parmesan cheese just before serving.
