Ingredients

  • 1 cup fresh green peas (or 1 cup frozen peas, thawed)
  • 1 bunch asparagus (about 1 pound), trimmed and cut into bite-sized pieces
  • 3 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese
  • 2 cups arugula or spinach

Instructions

  1. Rinse the green peas and asparagus under cold water. Trim tough ends off the asparagus and cut into bite-sized pieces.
  2. Blanch the asparagus in boiling salted water for 2-3 minutes until bright green and tender-crisp.
  3. Shock blanched asparagus in an ice bath to retain color and crunch.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. In a large bowl, combine arugula/spinach, blanched asparagus, and green peas. Drizzle with vinaigrette and toss gently to coat.
  6. Top with freshly grated Parmesan cheese just before serving.
