Ingredients

  • 9 lasagna noodles (standard or no-boil)
  • 2 cups ricotta cheese
  • 1 drop green food coloring
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 1 cup whipped cream (lightly whipped)
  • ½ cup chocolate chips (optional)

Instructions

  1. Cook the lasagna noodles according to package instructions until al dente. Drain and lay flat on a clean kitchen towel.
  2. In a bowl, mix ricotta cheese, sugar, and vanilla extract until creamy.
  3. Add green food coloring to the ricotta mixture, stirring until you achieve your desired shade of green.
  4. In a greased baking dish, spread a thin layer of the ricotta mixture on the bottom. Layer noodles over it and repeat until ingredients are used up, adding chocolate chips if desired.
  5. Cover with foil and bake at 350°F (175°C) for about 25 minutes. Let cool completely before serving.
