  • 16 oz cream cheese (full-fat)
  • 3/4 cup granulated sugar
  • 3 large eggs (fresh)
  • 2 tbsp matcha powder (ceremonial grade)
  • 1 cup fresh strawberries (halved)
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 cup biscuit crumbs (digestive biscuits preferred)
  • 1/4 cup unsalted butter (melted)

Instructions

  1. Preheat oven to 400°F (200°C) and line an 8-inch springform pan with parchment paper.
  2. In a bowl, combine biscuit crumbs and melted butter; press into the bottom of the prepared pan.
  3. Beat cream cheese and sugar until smooth in a separate bowl. Add eggs one at a time, mixing well after each addition.
  4. Sift in matcha powder and mix gently until fully incorporated. Stir in vanilla extract and heavy cream until well blended.
  5. Fold in halved strawberries carefully to avoid mashing them.
  6. Pour batter over the crust and smooth the top. Bake for 25-30 minutes until edges are set but center is slightly jiggly.
  7. Turn off oven; let cheesecake cool inside for about an hour before transferring to room temperature and refrigerating for at least four hours or overnight.
  8. Serve chilled with additional fresh strawberries on top.
