Description

  • 8 oz pasta (fusilli or penne)
  • 1 cup sweet corn (fresh or canned)
  • 1 medium red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp freshly squeezed lime juice
  • 1/2 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and cool under cold water.
  2. If using fresh corn, grill or boil until tender; slice off kernels. For canned corn, drain well.
  3. In a large bowl, combine cooled pasta, corn, diced bell pepper, and chopped cilantro.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper; pour over the pasta mixture.
  5. Toss gently to combine; top with crumbled feta cheese and serve immediately.
