  • 1 cup mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup maple syrup
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C). Bake sweet potatoes for about 45 minutes until tender. Let cool and peel.
  2. In a large bowl, whisk together almond flour, cocoa powder, baking powder, and a pinch of salt until smooth.
  3. In another bowl, mash the cooled sweet potatoes until smooth. Mix in maple syrup and vanilla extract until well combined.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined.
  5. Stir in dark chocolate chips evenly through the batter.
  6. Pour the batter into a lined baking pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean but moist.
