- 2 medium sweet potatoes (about 2 cups cubed)
- 2 fresh lemons (juice and zest)
- 3 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into cubes.
- In a bowl, combine olive oil, juice from one lemon, garlic powder, salt, pepper, and paprika. Add chicken breasts to the marinade and let soak for 30 minutes.
- Toss sweet potato cubes with olive oil and seasonings on a baking sheet. Roast for 25-30 minutes until golden brown.
- Heat olive oil in a skillet over medium heat. Add marinated chicken breasts; cook for about 6-7 minutes per side until golden brown and cooked through.
- Slice the chicken into strips. In bowls, layer sweet potatoes and chicken beautifully; squeeze more lemon juice on top if desired.
- Garnish with chopped fresh parsley and serve warm.
