  • 1 lb boneless, skinless chicken breasts
  • 2 medium sweet potatoes (about 2 cups cubed)
  • 2 fresh lemons (juice and zest)
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and peel the sweet potatoes, then cut them into cubes.
  2. In a bowl, combine olive oil, juice from one lemon, garlic powder, salt, pepper, and paprika. Add chicken breasts to the marinade and let soak for 30 minutes.
  3. Toss sweet potato cubes with olive oil and seasonings on a baking sheet. Roast for 25-30 minutes until golden brown.
  4. Heat olive oil in a skillet over medium heat. Add marinated chicken breasts; cook for about 6-7 minutes per side until golden brown and cooked through.
  5. Slice the chicken into strips. In bowls, layer sweet potatoes and chicken beautifully; squeeze more lemon juice on top if desired.
  6. Garnish with chopped fresh parsley and serve warm.
