- 2 medium sweet potatoes (about 500g), peeled and chopped
- 1 cup red lentils (200g), rinsed
- 2 cloves garlic, minced
- ½ cup fresh cilantro leaves, chopped
- 1 ripe avocado
- 2 tbsp lemon juice (freshly squeezed)
- 1 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup all-purpose flour (or gluten-free alternative)
- Olive oil for frying
Instructions
- Boil sweet potatoes in salted water until tender, about 15 minutes. Drain and mash until smooth.
- In another pot, cook red lentils in two cups of water until tender, about 15–20 minutes. Drain.
- Combine mashed sweet potatoes and lentils in a bowl. Add garlic, cilantro, cumin, paprika, salt, pepper, and flour; mix gently.
- Shape mixture into patties about 1 inch thick.
- Heat olive oil in a skillet over medium heat. Fry patties for 4–5 minutes on each side until golden brown.
- For the sauce, blend avocado, cilantro leaves, lemon juice, salt, and pepper until smooth.
- Serve patties warm with a drizzle of avocado sauce.
