Description

  • 8 oz rotini pasta
  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded sharp cheddar cheese
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 cup sour cream (for serving)
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cook the rotini in salted boiling water until al dente; drain and set aside.
  3. Heat olive oil in a skillet over medium heat, sauté bell peppers until soft.
  4. Add ground beef; cook until browned. Stir in taco seasoning.
  5. In a large bowl, combine cooked pasta, beef mixture, black beans, diced tomatoes, and half of the cheese.
  6. Transfer to the baking dish; top with remaining cheese. Bake for 25-30 minutes until bubbly.
