Ingredients

  • 1 cup glutinous rice
  • 1 cup full-fat coconut milk
  • 2 ripe mangoes
  • 1/3 cup sugar (white or brown)
  • Pinch of salt
  • Optional: Sesame seeds or mung beans for garnish

Instructions

  1. Soak 1 cup of glutinous rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a lined steamer over boiling water for 25-30 minutes until tender.
  3. While steaming, gently heat 1 cup of coconut milk in a saucepan, stirring in 1/3 cup sugar and a pinch of salt until dissolved.
  4. Once steamed, mix half the coconut sauce into the warm rice and let it absorb for about 10 minutes.
  5. Slice the two ripe mangoes thinly.
  6. To serve, place sticky rice on plates, add mango slices, drizzle with remaining coconut sauce, and sprinkle optional toppings.
