- 1 lb ground chicken or turkey
- 1/2 cup plain or seasoned breadcrumbs
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp garam masala
- 1 can (14 oz) crushed tomatoes
- 1 cup coconut milk (full-fat)
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground chicken or turkey, breadcrumbs, minced garlic, chopped onion, cilantro, and spices. Mix until well blended.
- Roll the mixture into 1-inch meatballs using wet hands to prevent sticking.
- Heat oil in a skillet over medium heat and sear meatballs in batches until browned on all sides (about 6-8 minutes).
- Remove meatballs and add crushed tomatoes and coconut milk to the skillet. Stir well and bring to a simmer.
- Return meatballs to the sauce and let simmer for 15-20 minutes until cooked through.
- Finish with lemon juice before serving and garnish with fresh cilantro.
