  • 24 ladyfingers (savoiardi)
  • 1 cup mascarpone cheese
  • 1 cup freshly brewed espresso (cooled)
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 3 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract

Instructions

  1. Brew espresso and let cool. Stir in 1 tablespoon sugar until dissolved.
  2. In a bowl, mix mascarpone cheese with the remaining sugar and vanilla extract until smooth.
  3. In another bowl, beat egg whites until stiff peaks form. Gently fold into the mascarpone mixture.
  4. Quickly dip ladyfingers in coffee and layer them in a serving dish. Spread half of the mascarpone cream over the first layer.
  5. Repeat layering with remaining ladyfingers and cream. Cover and refrigerate for at least four hours or overnight.
  6. Before serving, dust generously with cocoa powder.
