  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz mascarpone cheese, softened
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 1 cup brewed espresso or strong coffee (cooled)
  • 2 tbsp cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press into the bottom of a springform pan to form the crust. Bake for 10 minutes; allow to cool.
  2. In a mixing bowl, blend mascarpone cheese and sugar until smooth. In another bowl, whip heavy cream until soft peaks form and gently fold into mascarpone mixture.
  3. Stir in cooled espresso until well combined.
  4. Layer half of the filling over the cooled crust; drizzle with additional espresso before adding remaining filling.
  5. Cover and refrigerate for at least 4 hours or overnight to set.
  6. Dust with cocoa powder before serving and slice.
