  • 1 block firm tofu (14 oz), pressed and crumbled
  • 1 medium red bell pepper, diced
  • 2 cups fresh spinach, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp turmeric powder
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp soy sauce (low-sodium if preferred)

Instructions

  1. Press the tofu: Wrap in paper towels and place a weight on top for about 15 minutes.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until translucent (about 3 minutes).
  3. Add diced red bell pepper and spinach; cook until tender (about 5 minutes).
  4. Crumble the pressed tofu into the skillet; sprinkle turmeric powder over the mixture and stir well.
  5. Season with soy sauce, salt, and pepper; cook for another 5 minutes until heated through.
  6. Serve hot with optional fresh herbs for garnish.
