  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick spray.
  2. Season the chicken breasts generously with salt and pepper. In a large skillet over medium-high heat, heat olive oil and sear chicken until golden brown (5-7 minutes per side). Remove from skillet.
  3. In the same skillet, sauté minced garlic and sun-dried tomatoes until fragrant. Pour in heavy cream and stir until bubbling; mix in grated Parmesan until melted.
  4. Add spinach to the sauce and allow it to wilt. Return chicken to the skillet, spooning sauce over it.
  5. Transfer everything to the preheated oven and bake for 15-20 minutes until chicken is cooked through.
