  • 2 lbs chicken thighs, skin-on
  • 1 cup bell peppers (mixed colors), sliced
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme
  • 3 tbsp soy sauce
  • 3 tbsp tomato paste
  • 1 cup carrots, sliced
  • 2 cups low-sodium chicken broth
  • 1 whole Scotch bonnet pepper (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse chicken thighs under cold water and pat dry. Season with salt, pepper, and thyme.
  2. Heat olive oil in a large pot over medium heat. Sauté onions and bell peppers until onions are translucent (about 5 minutes).
  3. Increase heat to medium-high, add chicken thighs skin-side down, and brown for 6-8 minutes without moving.
  4. Stir in minced garlic and tomato paste; cook for an additional minute until fragrant.
  5. Pour in chicken broth and soy sauce, scraping the bottom to release flavor bits. Bring to a boil, then reduce heat to low.
  6. Cover and simmer for 30-40 minutes until chicken is tender. Add Scotch bonnet pepper for the last 10 minutes if desired.
  7. Adjust seasoning before serving over rice or with crusty bread.
