  • 24 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 2 vanilla beans (seeds scraped)
  • 1 cup sour cream
  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. Mix graham cracker crumbs with melted butter and press into the bottom of the pan.
  3. Bake crust for 10 minutes, then cool.
  4. In a saucepan, brown the butter; set aside to cool slightly.
  5. In a bowl, beat cream cheese and sugar until smooth; mix in sour cream, eggs, and vanilla seeds.
  6. Gradually add browned butter while mixing well.
  7. Pour filling over cooled crust and bake for 50-60 minutes until slightly jiggly in the center.
