Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar; press into the bottom of a springform pan.
- Brown the remaining butter in a saucepan over medium heat until golden and nutty; cool slightly.
- In a mixing bowl, beat softened cream cheese with remaining sugar until smooth. Add eggs one at a time, then fold in sour cream, flour, vanilla beans, and salt until just combined.
- Pour filling over the crust and bake for 50-60 minutes until edges are set but center is slightly jiggly.
- Turn off oven, crack door open, and let cool for an hour before chilling in the refrigerator for at least four hours or overnight.
