  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • ¾ cup granulated sugar (divided)
  • 2 fresh vanilla beans (seeds scraped)
  • 16 oz cream cheese (softened)
  • 1 cup sour cream (full-fat)
  • 3 large eggs (room temperature)
  • 2 tbsp all-purpose flour
  • ¼ tsp salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar; press into the bottom of a springform pan.
  3. Brown the remaining butter in a saucepan over medium heat until golden and nutty; cool slightly.
  4. In a mixing bowl, beat softened cream cheese with remaining sugar until smooth. Add eggs one at a time, then fold in sour cream, flour, vanilla beans, and salt until just combined.
  5. Pour filling over the crust and bake for 50-60 minutes until edges are set but center is slightly jiggly.
  6. Turn off oven, crack door open, and let cool for an hour before chilling in the refrigerator for at least four hours or overnight.
  7. Remove from springform pan, slice, and serve.
