- 1 cup canned chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 small red onion, thinly sliced
- ½ cup Kalamata olives, pitted
- ½ cup hummus
- ¼ cup fresh parsley or mint, chopped
- Juice of 1 lemon
Instructions
- Rinse quinoa under cold water and cook according to package instructions. Allow to cool.
- If using dried chickpeas, soak overnight and simmer until tender; otherwise, use canned chickpeas.
- Chop cherry tomatoes and cucumber into bite-sized pieces. Soak red onion in cold water briefly if desired.
- In a large bowl, combine quinoa, chickpeas, chopped veggies, olives, and drizzle with lemon juice. Toss gently.
