Ingredients

  • 1 cup cooked quinoa
  • 1 cup canned chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 small red onion, thinly sliced
  • ½ cup Kalamata olives, pitted
  • ½ cup hummus
  • ¼ cup fresh parsley or mint, chopped
  • Juice of 1 lemon

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions. Allow to cool.
  2. If using dried chickpeas, soak overnight and simmer until tender; otherwise, use canned chickpeas.
  3. Chop cherry tomatoes and cucumber into bite-sized pieces. Soak red onion in cold water briefly if desired.
  4. In a large bowl, combine quinoa, chickpeas, chopped veggies, olives, and drizzle with lemon juice. Toss gently.
  5. Serve in bowls topped with hummus and garnish with fresh herbs.
