  • 9 lasagna noodles (no-boil or traditional)
  • 1 cup canned pumpkin puree (not pie filling)
  • 4 cups fresh baby spinach
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a pan, heat olive oil over medium heat and sauté spinach until wilted (about 3-4 minutes). Set aside.
  3. In a bowl, mix pumpkin puree with ricotta cheese, garlic powder, and Italian seasoning until well combined.
  4. In a baking dish, layer the ingredients: spread a thin layer of the pumpkin mixture at the bottom, followed by noodles, sautéed spinach, mozzarella cheese; repeat layers until ingredients are used up. Finish with mozzarella cheese on top.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  6. Let it rest for about 10 minutes before slicing and serving.
