- 9 lasagna noodles (no-boil or traditional)
- 1 cup canned pumpkin puree (not pie filling)
- 4 cups fresh baby spinach
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a pan, heat olive oil over medium heat and sauté spinach until wilted (about 3-4 minutes). Set aside.
- In a bowl, mix pumpkin puree with ricotta cheese, garlic powder, and Italian seasoning until well combined.
- In a baking dish, layer the ingredients: spread a thin layer of the pumpkin mixture at the bottom, followed by noodles, sautéed spinach, mozzarella cheese; repeat layers until ingredients are used up. Finish with mozzarella cheese on top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
