Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 cup fresh mint leaves
  • 2 tbsp freshly squeezed lemon juice
  • ½ cup sugar or honey (to taste)
  • Pinch of salt

Instructions

  1. Pick a ripe seedless watermelon, cube it, and remove any seeds.
  2. In a blender, combine watermelon, mint leaves, lemon juice, sugar or honey, and salt. Blend until smooth.
  3. Taste and adjust sweetness if necessary.
  4. Pour into a shallow dish, cover tightly with plastic wrap, and freeze for 2 hours.
  5. After freezing, scrape with a fork to fluff up the sorbet; return to freeze for another 1-2 hours.
  6. Scoop into bowls and garnish with mint leaves before serving.
