  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) Great Northern or Cannellini beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 4 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 8 oz cream cheese, softened
  • Cilantro (optional), for garnish

Instructions

  1. Prepare the ingredients by chopping the onion and mincing the garlic.
  2. Layer the chicken breasts at the bottom of the slow cooker.
  3. Add chopped onions, minced garlic, white beans, and green chiles on top of the chicken.
  4. Pour in chicken broth and sprinkle cumin and chili powder; stir gently.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  6. Shred cooked chicken with two forks and return to the pot.
  7. Stir in softened cream cheese until well combined.
  8. Taste and adjust seasoning; serve topped with cilantro if desired.
