- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cans (15 oz each) Great Northern or Cannellini beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 4 cups low-sodium chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 2 tsp chili powder
- 8 oz cream cheese, softened
- Cilantro (optional), for garnish
Instructions
- Prepare the ingredients by chopping the onion and mincing the garlic.
- Layer the chicken breasts at the bottom of the slow cooker.
- Add chopped onions, minced garlic, white beans, and green chiles on top of the chicken.
- Pour in chicken broth and sprinkle cumin and chili powder; stir gently.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
- Shred cooked chicken with two forks and return to the pot.
- Stir in softened cream cheese until well combined.
