  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 medium Yukon Gold potatoes, diced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 tbsp tomato paste
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the vegetables.
  2. In a large pot over medium heat, add olive oil. Brown the beef cubes on all sides for about 4-5 minutes.
  3. Remove the beef and sauté onions in the same pot until translucent (about 3 minutes). Add garlic and cook until fragrant.
  4. Stir in tomato paste, then add broth, carrots, potatoes, thyme, bay leaves, salt, and pepper. Return the browned beef to the pot.
  5. Bring to a boil, then reduce heat and simmer gently for about 2 hours or until beef is fork-tender.
  6. Remove bay leaves before serving and enjoy with crusty bread.
