  • 4 medium Russet potatoes (about 1.5 lbs), cut into sticks
  • 2 tablespoons za’atar spice blend
  • 3 tablespoons tahini
  • 2 tablespoons freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • Salt to taste

Instructions

  1. Preheat oven to 425°F (220°C). Wash and cut potatoes into even-sized sticks.
  2. Rinse potato sticks under cold water and pat dry with paper towels.
  3. In a bowl, toss potato sticks with olive oil, za’atar, and salt until evenly coated.
  4. Spread the seasoned potatoes on a parchment-lined baking sheet in a single layer and bake for 30–35 minutes, flipping halfway through until golden brown.
  5. While fries bake, mix tahini, minced garlic, lemon juice, water (as needed), and salt in a bowl until smooth.
  6. Serve hot with tahini sauce for dipping.
